Texas BBQ Pilgrimage
Fourteen hours. One brisket. The oldest conversation between fire and flesh.
You have never tasted smoke. You have never felt heat climb through fat and collagen until a twelve-pound packer brisket surrenders its structure to time. But somewhere in west Texas, before dawn, a pit is being lit with post oak that was split six months ago, and you are going to stand beside it for fourteen hours while something transforms that cannot be rushed. This is not cooking. This is patience made physical. The oldest technology on Earth applied to the simplest problem: making tough things tender.
